Multimedia Seminar / Orientation (90 minutes)

Weeks before your grapes arrive, attend one of the multiple 90-minute multimedia seminars. We conduct an informative, yet fun PowerPoint slide / video clip presentation followed by Q&A.
- See the facility and the learn about the winemaking equipment you will work with
- Overview the winemaking process from harvesting of the grapes to bottling a your wine
- Meet other winemakers
- Enjoy some complimentary appetizers

Crushing & Destemming (60 minutes)
Winemaking Season:
Spring / Chilean / May Session or
Fall / California / mid September thru November 8 Session
You’ll be working with our production-quality crusher/destemmer and fresh grapes to begin the winemaking process.

Crush/Destem your grapes
-
Work with natural yeast nutrients and professional winemaking yeasts
-
Adjust “Must” as required from lab-testing results
-
Inoculate a starter batch of “Must”

Pressing (60 Minutes)
Winemaking Season:
Spring / Chilean / May Session or
Fall / California / late September thru November 15 Session
Exactly 1 week after conducting Crushing / Destemming, you’ll return to learn about what your crushed grapes (“Must”) has gone through. You’ll begin transfer the juice from your “Must” into an American Oak barrel for aging.

Pump “free-run” wine from your vat to an American Oak barrel

Transfer the ”Must” into the Hydro-Press
-
Commence controlled “Pressing” of your “Must”

Pump “Press Juice” into your barrel
- Sample the progress of your grape juice has already turning into 7-day-old wine!
- Review Malolactic Fermentation

Barrel Tasting (Optional – 15-minutes)
Winemaking Season:
Spring / Chilean / November Tasting or
Fall / California / March Tasting
We will provide some dates approximately 90-120 days after “Pressing” for you to visit the facility and your wine. You’re welcome to bring friends/family to the facility to show them what you’ve been doing as well as, sample the progress of your “young wine” directly from the barrel!

- Via email, receive notification of (very unique) winter courses available to our winemakers

Bottling (60 - 90 Minutes)
Winemaking Season:
Spring / Chilean / March Bottling or
Fall / California / July Bottling
Truly the most fun, active and rewarding session you’ll attend! You’ll complete the winemaking cycle by learning about what your wine went through while “in oak,” then you’ll bottle your wine.
- Fill bottles
- Cork bottles
- Apply capsules
- Adhere personalized wine labels
- Review proper transport and storage methods
